Mrs.Field's Chocolate Chip Cookies

2c. butter
2c. white sugar
2 c. brown sugar
4 eggs
2 tsp. vanilla
-Cream first five ingredients together and beat well
4 c. flour
1 Tbsp. salt
2 Tbsp. baking soda
2 Tbsp. baking powder
- Sift together and then add
5 c. oatmeal (crush to powder)
7 oz. Hershey chocolate bar grated
24 oz. chocolate chips
3 c. pecans chopped
-Add and mix thoroughly
Make golf ball size balls and flatten a little.
Bake 375 degrees for 9-10 minutes. Makes about 112 cookies.
Variations:
White chocolate chips and Macadamia nuts
White chocolate chips and coconut
Golden raisins and walnuts

Ginger Soy Shrimp

2 lg. shallots
4 cloves of garlic
3/4 c. soy sauce
3 Tbs. ginger
1/2 c. lime juice
2 Tbs. sugar
1/4 c. green onion
1/4 c. peanut oil
1/4 tsp. pepper
Marinade shrimp and grill.

Yeast Rolls

5-6 cups flour
2 pkg. yeast
1/2 c. sugar
1 1/2 tsp. salt
1/2 c. melted butter
1 1/2 c. hot water
2 eggs
Combine sugar, eggs, salt and butter. Add yeast. Add flour. Let rise. Bake 350 for 20 - 30 minutes.

To make into cinnamon rolls: Roll out dough. Cover with 1/2 c. butter. Mix 1 c. brown sugar and 1 tsp. cinnamon. Spread over butter and roll. Makes 12-18 cinnamon rolls.

Thai Wraps

1/4 c. sugar
1/4 c. creamy peanut butter
3 Tbs. soy sauce
3 Tbs. water
2 Tbs. cooking oil
1 tsp. minced garlic
1 tsp. graded fresh ginger
1/2 tsp. garlic salt
1/4 tsp. pepper
12 oz. skinless boneless chicken
1 Tbs. cooking oil
4 c. shredded broccoli slaw
1 medium onion
Head of lettuce

In a small saucepan combine sugar, peanut butter, soy sauce, water, 2 Tbs. cooking oil, minced garlic. Heat until sugar is disolved. Set aside.
Coat chicken with garlic salt and pepper.
Heat cooking oil in skillet and stir in chicken over medium high 2-3 minutes. Remove chicken and add broccoli slaw, onion and ginger. Cook oil until tender 2-3 minutes.

Black Bean Corn Salsa

3 avocadoes
1/2 red onion or vidalia
2 tomatoes (take out seeds)
1/2 bunch cilantro
3 cloves garlic
1 can whole corn (1 cup)
1 can black beans (rinsed)
3 Tbs. lime juice
2 Tbs. olive oil
1 Tbs. red wine vinegar
1 tsp. salt
1/2 tsp. pepper

Food process garlic and cilantro. Add liquids, salt and pepper. Add that to chopped veggies and beans.

Poppy Seed Chicken

1 cream of chicken soup
8 oz. sour cream
2 c. cooked and diced chicken
milk as needed
1 stick butter
1 sleeve ritz crackers or 1 c. bread crumbs
2 Tbs. poppy seeds

Mix first 4 ingredients and put casserole dish. Melt butter and mix with crackers and poppy seeds. Spread on top of chicken mixture. Bake at 350 for 30 minutes.

Peppered Beef

3 lb. beef roast (rolled rump)
1/2 jar pepperchini (no stems)
Put meat in crockpot. Pour half jar of pepperchinis (sliced) and juice over top of roast. Put on for 6 hours. Great on bun with horseradish sauce.
